  • 1/4 tsp cardamom powder

  • 1 tsp ghee

  • 2 cups wheat flour
  • A pinch of salt
  • Water, as needed
  • 1 tsp oil

How to make Puranpoli

Instructions:

For the filling:

  1. Rinse the chana dal and soak it in water for 2-3 hours.

  2. Drain the water and transfer the soaked dal to a pressure cooker. Add 3 cups of water and pressure cook for 4-5 whistles or until the dal is cooked.

  3. Once the pressure is released, open the cooker and mash the dal with a spoon or a masher.

  4. Heat a pan on medium heat and add ghee to it.

  5. Add the mashed dal, grated jaggery, cardamom powder, nutmeg powder, and saffron to the pan. Mix well and cook for 10-15 minutes until the mixture thickens and the jaggery is melted completely.

  6. Turn off the heat and let the filling cool down.

For the dough:

  1. In a mixing bowl, add wheat flour and a pinch of salt. Mix well.

  2. Add water gradually and knead the dough until it is soft and pliable.

  3. Add oil to the dough and knead it again for a few minutes.

  4. Cover the dough and let it rest for 15-20 minutes.

To make Puranpoli:

  1. Divide the dough into small balls.

  2. Take one dough ball and roll it into a small disc.

  3. Place a spoonful of the filling in the center of the disc.

  4. Fold the edges of the dough over the filling and seal it properly.

  5. Roll the stuffed ball into a flatbread using a rolling pin.

  6. Heat a griddle or a tawa on medium heat.

  7. Place the rolled Puranpoli on the griddle and cook on both sides until it is golden brown.

  8. Remove from the griddle and serve hot with ghee or milk.
